A convenient ready-to-go snack that is low in calories, celery is a staple for many of us. One of the most versatile vegetables around, besides its use as a quick snack, celery is used in salads, stir-fries, soups, and stews. Unlike some vegetables, it retains most of its nutrients even if it is steamed.
One stalk of celery contains only about 10 calories, while 1 cup of chopped celery contains about 16. It also contains dietary fiber, which aids in digestion. Since it is about 95% water it is excellent to snack on during the hot summer months to prevent dehydration.
Refrigerate celery as soon as possible. It will keep for about 1-2 weeks. To store, wrap in a damp towel or place in a plastic bag and store in the hydrator drawer of the refrigerator. Some people highly recommend wrapping celery tightly in aluminum foil to prolong its crispness.
