Yellow, orange or red bell peppers provide most of the same nutrients as the green. Several sources say the Vitamin C content is higher in the colored as compared to the green. The flavor is usually sweeter as well. Store unwashed in the vegetable drawer of your refrigerator. Wash under cold running water just before using. These peppers can be stuffed, grilled or simply sliced and used fresh in salads.
