The inclusion of rutabagas or turnips in this week’s share tells us that we are now well into the season of root vegetables. The parsnips and beets last week were another indication. Just in time, because the cooler weather tends to start us thinking about soups, stews and casseroles for dinner. Any of the hearty root vegetables served with roast beef, pork or chicken will warm everyone up. Along this line, I found the Butternut Squash Casserole with Quinoa (see Recipe Section) to be a colorful, filling and very tasty main dish.  For those of you who haven’t tasted rutabagas before, try the Rutabaga Fries (see Recipe Section). It’s an easy and fun way to introduce kids to them. Try serving them with ketchup or ranch dressing. Most kids seem to enjoy anything dipped in ranch dressing.  And finally, for dessert, a Chunky Apple Cake. It’s a great one to snack on while completing those homework assignments, or to enjoy with a cup of tea after a day of fall clean-up in the yard.
