A frequent request from our customers in the market, green tomatoes are making an appearance in this week’s share. Fried green tomatoes are the most obvious choice when deciding what to do with them, and you most likely already have one of those recipes. So I decided to look for a main dish recipe, something more substantial. When I tried the Green Tomato Parmesan (see Recipe Section) it was just what I had in mind. I hope you like it as well. I have found you can’t go wrong with the recipes on the Taste of Home website. The directions are clear, concise and I have never been disappointed with the results!
Many of us have either prepared or eaten spinach lasagna, and I think it’s a nice change from the standard lasagna. (My husband wouldn’t agree, and that’s OK.) But Kale Lasagna? Why not? The Low Carb Sausage and Kale Mock Lasagna Casserole (see Recipe Section) is easy to prepare, it does provide some meat for our meat lovers, is gluten-free, and it’s delicious! Consider this recipe for one more way to use the kale in this week’s share. Or here’s another suggestion: prepare Spaghetti Squash Boats with kale, sausage and mushrooms. Simply bake the spaghetti squash in the oven as usual. While it’s baking, brown some turkey or chicken sausage and then add some chopped onion, minced garlic and mushrooms. (It’s a mushroom week for those who purchased a mushroom share!) As the sausage finishes browning, add torn kale leaves. Cook just until the leaves are wilted and reduced by half. After the spaghetti squash finishes baking, remove from oven and loosen the strands with a fork. Be careful not to scrape through to the outer shell–you want to use this as a serving vessel. Remove the strands from the “boat” and add them to the pan. Mix thoroughly and season with salt and pepper to taste. Fill each of the squash vessels with the squash-kale-sausage medley. (Optional: sprinkle with red pepper flakes.) Ready to serve–delicious and colorful!

It looks like this weekend will be a little warmer and sunnier than some of our previous ones–a good time to go out to the patch and find that perfect pumpkin. For those of you who are making plans for MEA, this is an option. Looking forward to seeing many of you! Have a wonderful week.
