As we promised, you’ll notice a wide selection of root vegetables this week. These are delicious roasted in the oven, accompanied by a pork or beef roast. And an easy way to provide those recommended five vegetables a day. Acorn squash is making an appearance in this week’s share as well. I’m sure you have your own favorite way of preparing it. When I tried Guy Fieri’s recipe for Roasted Acorn Squash with Mushrooms, Peppers and Goat Cheese, (see Recipe Section) I just had to share it with you. I hope your family enjoys it as much as we did.
Every year we get questions on how to roast/toast pumpkin seeds. It’s fun for the kids to learn about. Since so many of you have now picked out your special pumpkin from the patch, we thought this would be a good time to share some recipes. When you look ahead to the recipe section, you’ll find three different ways to season your pumpkin seeds. The basic preparation method is the same for each version, the only difference is the type of seasoning you use. Try all three for a great snack during those football games.
