Hello to all of our members! Were you able to make it out to the pea patch for our first Harvest Event of 2019? I hope many of you did, as it’s so much fun and you can pick a nice amount in a relatively short time. Since peas are part of this week’s share, we featured a recipe which includes peas and the bok choy you will also receive. When we are having a stretch of oppressive hot humid days such as the last few, I tend to look for simpler recipes that are not too time consuming. On the Real Simple website, I found a main dish, Steak Stir-fry with Snap Peas, Bok Choy and Basil, that fits those criteria. I hope you like it as much as we did!
The Bok Choy Salad is a cool, crispy luncheon or light dinner salad. Kids really like the crunchiness of the ramen noodles in this one. It can easily be doubled and brought along when you go camping, or to those family barbecues or reunions. If you do this, remember to keep each component separate (the bok choy, the ramen mixture, and the dressing) and mix them together just before serving.
And I must give credit to our own Patti C. for suggesting the Beer-Battered Green Beans recipe! When I mentioned that green beans were making their first appearance for 2019, she told me how delicious they are in a beer batter. I think this will be a fun way to serve green beans, alongside grilled chicken, brats or hamburgers. Add a tossed green salad, a glass of lemonade or iced tea, and you have another easy summer dinner. Thank you, Patti!
