Sweet corn is arriving this week! It’s always exciting when sweet corn makes its first appearance in our share boxes. While many of you may prefer to simply cook it or grill it for this first time, I did include a delicious recipe for Sweet Corn and Tomato Salad, in case you’d like to experiment. (You’ll find it in This Week’s Recipes.) It’s a good way to use the tomatoes in our share, and since cilantro is included in the ingredients, it makes an excellent salsa as well.
Another way to use our tomatoes this week is in the Tomato Caprese Salad, also in This Week’s Recipes. It’s quick and easy to prepare, and pairs well with chicken, burgers or brats fresh off the grill (and of course, sweet corn!) Tomatoes are so versatile, and it’s fun to find new ways to use them. If any of you have a favorite recipe you’d like to share with our members, we’d love to include it! Some of our members have sent a selection of their recipes, and I’m going to share them with you when we have the produce items in our boxes.
Let’s talk about those luscious raspberries in our shares this week. As you already know, raspberries have a short shelf life. That means they need to be used/eaten quickly! What works best for me is to go through them as soon as I get home, eliminating any possibly damaged ones. Then I spread them out on a paper towel-lined plate. An easy way to use them right away is in a healthy smoothie. You may have your own favorite smoothie recipes, but I did include one this week for you to consider, titled Raspberry Banana Smoothie. Or enjoy them on top of a scoop of vanilla ice cream. If you feel like baking this week, the Fast Raspberry Scones recipe can be made the same day/night you arrive home with your share, and enjoyed for breakfast the next day. I compared several recipes for scones and so many of them were rather labor intensive! The one titled “Fast Raspberry Scones” caught my eye and I think it’s a winner. You may notice that in the “Prep Time”, I stated “15-30 minutes”. That’s because it always seems to take me longer to prepare something than the author of the recipe states. In other words, Martha Stewart can do it in 15 minutes, but not me!
