Hello to all our CSA members–here we are on week 8, and we’re halfway through our season already! Have you been able to use everything in your boxes by the time the next one arrives? We have, most of the time, but once in awhile you may find it challenging to finish everything. Next week, I’ll offer some suggestions on how to handle that. For now, I want to make sure you all know that in the boxes this week, some of our members will receive Swiss chard and others will receive celery. Both are easily included in a variety of dishes.
We’re offering two salad recipes this week that will include the radishes and celery from your shares. The Celery and Radish Salad is quick and easy to prepare. And the Potato Salad with Radishes and Celery takes just a little bit longer, because the potatoes need time to cook.
For those who receive Swiss chard, I have a main dish recipe, Sausage and Swiss Chard Lasagna. If you are new to this vegetable and unsure about it, you’ll find it blends beautifully with the cheese and sausage.
Finally, a big thank you to Darleen Harens for sending us the recipe for Creamy Chili-Lime Sweet Corn. It’s delicious, and another great way to enjoy our sweet corn.
