Purple Green Bean Summer Salad

This colorful salad was found on YouTube, created by Tess. (Tess Cooks 4 U) It’s a fun way to enjoy those beautiful purple beans. Of course, green beans can be used as well.
Prep time: 20 minutes
Chill time: 1-2 hours
Servings: 4
For the Salad:
2 cups Purple green beans, cut diagonally into bite-size pieces
2 cups fresh cooked Sweet corn
1 cup Green bell pepper, cut into bite-size matchstick pieces
1 cup halved Cherry tomatoes
1 cup grated Carrot
1/4 cup finely diced Red onion
3 finely diced Figs  (optional)
For the Dressing:
1/2 to 3/4 cup Safflower oil – or oil of your choice
1/4 cup crushed Almonds
1/4 cup grated Romano cheese
Salt and pepper
zest of one Lime
juice of one Lime
1/4 cup fresh chopped Dill
1/4 cup fresh chopped Parsley
1 Tablespoon chopped Chives
1. Combine all salad ingredients in a large bowl.
2. In another small bowl, combine all dressing ingredients. Whisk together well.
3. Add dressing to salad ingredients and toss well. If desired, garnish with sliced almonds.
4. Refrigerate for 1-2 hours before serving. Delicious with grilled chicken!
