Found on the Food.com website and shared by a contributor known as Wildflour, this is a fun alternative way to serve sweet corn.
Prep and Cook time: 35 minutes
Servings: 8 skewers*
Ingredients:
4 ears Sweet corn, cut into 3-inch pieces
4 medium Red onions or 4 medium Sweet onions, quartered
4 medium Zucchini, cut into 2-inch chunks
1/4 cup Butter, melted
2 Tablespoons chopped fresh Parsley
1/2 teaspoon Chili powder
1/2 teaspoon ground Cumin
Directions:
1. Thread veggies alternately onto 8 long *skewers. *(If using wooden ones, remember to soak in water first.)
2. Combine remaining ingredients; brush part of butter-seasoning mixture over veggies.
3. Place skewers onto grill about 6″ above heat.
4. Grill 20 minutes, turning and brushing veggies with butter mixture.
