Quad the Sauce!

This amazing spaghetti sauce recipe is another family recipe from our own Brenda Allreck. When she isn’t working in her beautiful garden or making delicious meals for her family, you’ll find her in the greenhouse or market here at Pahl’s. You’ll notice this recipe makes a large amount of sauce, which Brenda freezes in meal-size portions to have on hand all winter. As you take out each portion to thaw for dinner, add other ingredients at your discretion. (for example: mushrooms or peppers)
4 pounds Italian Sausage
4 pounds Ground Beef
2 cups Onions
8 cloves Garlic (or more, according to your family’s taste)
1/2 cup Sugar
2 Tablespoons Basil
2 teaspoons Fennel seed
1 Tablespoon plus 1 teaspoon Italian seasoning
4 Tablespoons Salt
1 teaspoon Pepper (or more, to taste)
1/2 cup Parsley
10 pounds Tomatoes
24 ounces Tomato paste
64 ounces Tomato sauce
2 cups Water
Fire roasted peppers
1. Saute sausage, beef, onion and garlic until well browned. Drain.
2. Add seasonings; mix well.
3. Add tomatoes with juice, tomato sauce, tomato paste, water and peppers. Mash peppers with a spoon.
4. Bring to a boil; reduce heat to a simmer. Continue simmering until thick (about 3 hours).
