Sweet Corn Salsa

Shared by farmer Cole, you’ll notice this delicious salsa recipe includes several of the items in this week’s share. Excellent in vegan burritos or enchiladas, or served with chips, it can be made according to your family’s taste preference. Thanks Cole!
Ingredients:
8 ears of Sweet corn, cooked and cooled
2 teaspoons Lime juice
2 teaspoons Salt
2 Tablespoons Sugar
1 large Red Onion, chopped (try half to start, then add more according to your family’s taste)
1/3-1/2 bunch of Cilantro, chopped (again, to taste)
3-4 fresh Jalapenos, seeded and diced (to taste, depending how hot your family likes it)
Directions:
1. While holding cooked corn upright, remove kernels from each ear with a serrated knife. Place cut corn in large bowl.
2. Add chopped onion, cilantro and jalapenos.
3. Squeeze lime juice over corn mixture. Sprinkle salt and sugar over mixture and blend in thoroughly.
4. Serve with your favorite corn chips.
