Harvest Highlights: Week 6 CSA News & Updates

Before we dive in, we extend our heartfelt gratitude to those CSA members that shared recipes with us this past week.  This is a celebration of not just a recipe but of our community’s spirit, where innovation, cooperation, and farm-fresh goodness blend seamlessly.  So, let’s raise our cooking spoons and toast to the creative minds in our CSA community!

We are excited to share Fiesta Corn, a delightful recipe generously offered by one of our long-time CSA members in a previous season. It was such a big hit that we couldn’t resist sharing it again!  This is one of those recipes that you can adapt to suit your family’s preferences. For instance, if jalapenos are too hot for some of you, try green bell peppers instead. Some variations of this recipe call for a can of black beans; to add fiber, include those if you like. Thanks once again, Darleen!

We are thrilled to share a special highlight from one of our incredible members who is inspiring us by truly embracing the essence of our CSA community.  “Some of the recipes we have been making with our produce! I have been loving planning menus and finding new recipes around the produce we get each week. Such a fun challenge!”  We couldn’t be more excited to witness such enthusiasm and passion for farm-fresh cooking! This member’s dedication to planning menus and discovering new recipes based on our weekly shares embodies the very essence of what we want all our members to experience – joy, creativity, and a genuine connection to the natural goodness of our farm.  Thanks Haley, we will be sharing your recipe ideas in future newsletters!  As we continue this delectable journey, we invite you all to join in the fun and share your own kitchen adventures.

Jalapenos make their first appearance in our shares for this season, one of several peppers we will be offering in the next few weeks. If you are looking for a way to use your jalapenos, consider the Southwestern Style Beef and Potato Casserole. This offers a change of pace from all the grilling many of us have gotten used to in these last few weeks. You’ll be able to use several of the items in this week’s share in just one recipe. Although the recipe calls for canned corn, we highly recommend using freshly cooked sweet corn.

This week’s share also includes another variety of cabbage, Savoy cabbage. The main dish recipe, Chicken Fajitas with Savoy Cabbage Slaw, goes together quickly and easily, especially after work. Note that the cabbage slaw can be made a day ahead to simplify matters and meld the flavors.

We hope many of you were able to make it to the green bean field to pick fresh green beans.  You may find yourself with an abundance of beans (especially since they are also still coming in the share boxes!).  For our new members, and as a reminder to our returning members, clicking on the green bean image listed under “What to Expect in Your Share Box” will link you to our website showing a description of the item and at the end, some Related Recipes from past newsletters. Hopefully, you’ll find several additional recipes to use up those fresh beans!
