We are excited to share Fiesta Corn, a delightful recipe generously offered by one of our long-time CSA members in a previous season. It was such a big hit that we couldn’t resist sharing it again! This is one of those recipes that you can adapt to suit your family’s preferences. For instance, if jalapenos are too hot for some of you, try green bell peppers instead. Some variations of this recipe call for a can of black beans; to add fiber, include those if you like. Thanks once again, Darleen!

Jalapenos make their first appearance in our shares for this season, one of several peppers we will be offering in the next few weeks. If you are looking for a way to use your jalapenos, consider the Southwestern Style Beef and Potato Casserole. This offers a change of pace from all the grilling many of us have gotten used to in these last few weeks. You’ll be able to use several of the items in this week’s share in just one recipe. Although the recipe calls for canned corn, we highly recommend using freshly cooked sweet corn.
This week’s share also includes another variety of cabbage, Savoy cabbage. The main dish recipe, Chicken Fajitas with Savoy Cabbage Slaw, goes together quickly and easily, especially after work. Note that the cabbage slaw can be made a day ahead to simplify matters and meld the flavors.
We hope many of you were able to make it to the green bean field to pick fresh green beans. You may find yourself with an abundance of beans (especially since they are also still coming in the share boxes!).
