We thought it would be nice to post recipes for some of our homegrown items. What a better way to spice up the summer with a new and exciting taste!
For those of you who are interested in freezing corn this is the recipe for you! Grandma Pahl herself used to use this recipe. The purpose for freezing the corn was so she could have a fresh and super sweet tasting corn in the middle of winter!
Grandma Pahl’s Freezing Corn

9 C- Fresh corn, removed from the cob

2 C- cold water

1 Tbsp. salt

¼ C-sugar

1 Stick margarine
Place all ingredients in a 9” x13” pan and cover. Bake at 350 degrees for 40-50 minutes. Bag
and freeze. Then enjoy fresh corn at any time of the year!
Fresh Homestyle Salsa
- ½ tsp.- salt
- ½ C- Vinegar
- 1 Tbsp- Vegetable oil
- 1 Large onion-chopped
- 2 Cloves garlic-minced
- ½ C- Cilantro-Chopped
- 1 Green pepper-chopped
- 3-4 medium/large tomatoes peeled and diced
- 2 or more Hot Peppers (add more to preferred taste)
- Lime juice
Add all ingredients in a bowl and mix well. Serve with chips
Cucumber Dip
- ½ Cucumber
- ½ medium onion
- 2 small cloves of garlic-minced
- 3 Fresh green onions
- 1 Pint sour cream
- 1 8oz. package of cream cheese
- Dash of Chives
- Salt and Pepper to taste
Peel cucumber and finely chop. Chop onions.
Mix sour cream and cream cheese.
Combine all ingredients and mix.
Serve with crackers or chips.
