Baking potatoes are a type of potato, such as a russet or white, that are commonly used for baking, but can also be used for mashing, broiling or frying. This potato typically has brown skin and white flesh. It has a high starch content, low moisture content and a dry, crumbly texture after baking.
Remember to store your potatoes in a cool dry place. It is not recommended to store them in the refrigerator because the cold temperature converts the starch into sugar, the potatoes will become sweet and then turn a dark color when cooked. Also avoid storing potatoes with onions, as the gas given off by onions will accelerate the decay of potatoes.
