Green or Red Leaf Lettuce

Green leaf lettuce, along with red leaf, is an excellent source of vitamins A and K.  In general, the greener and darker the leaf, the higher the nutritional value.  All of the lettuces provide a great source of dietary fiber as well.  Store green leaf lettuce in a plastic bag in the hydrator drawer of the refrigerator.  Wash just before using.  Remember to eat it within a few days.

Red leaf lettuce adds interesting color and texture to any salad.  It is a rich source of vitamins A and K, and is high in antioxidants.  Store in a plastic bag in the hydrator drawer of the refrigerator.  Wash just before using.  It has a shorter shelf life than some lettuces, so remember to use it within a few days.
