Fresh pineapple is low in calories and provides a high amount of fiber in the diet. It is an excellent source of vitamin C and also contains small amounts of vitamin A. Sailors carried it on the ship with them to prevent scurvy. It is rich in the B-complex group of vitamins such as folates, thiamin, pyridoxine, and riboflavin and is also rich in minerals such as copper, potassium, and manganese. It is a wonderful addition to fruit salads as well as coleslaw. If you’ve never had pineapple on the grill, try it.
