Commonly called “new” potatoes or baby reds, “B” size red potatoes are a true delicacy. Ranging in size
from 1 1/2 inches to 2 1/4 inches in diameter, they cook quickly and have a somewhat sweet taste. Due to
its firm texture, this potato is excellent in salads, casseroles, and soups. The skins are tender and edible.
Store in a cool, dry place–no need to refrigerate. Scrub gently, as the skins are thin, just before cooking.
