I hope many of you were able to make it out to the bean field this week. We stopped in Saturday evening to check it out. The beans were beautiful and plentiful! It’s a bit of a walk, so wear sturdy shoes and be aware of some soft spongy areas. We enjoyed it, and I know you will too. Remember you still have the rest of this week, through the weekend, to pick your own.
You’ll notice that kale is making another appearance in this week’s box. Seeking to do something different with it, I tried Martha Stewart’s recipe for Kale, Corn and Jalapeno Muffins (see Recipe Section). We enjoyed a few of them with our brats from Von Hanson’s, and I found the rest can easily be frozen to use at a later time.
One of the reasons I love Swiss chard is it’s versatility. It can be steamed quickly and easily for a side dish, or incorporated into a main dish (Breakfast Burritos, see Recipe Section). Since we’re going camping this weekend, I’ll be making these ahead to bring along.
Sweet Success, the white sweet corn in this week’s share, will be new to some of you. Prepare it the same way as you’ve been cooking the previous week’s corn. Remember not to overcook sweet corn–add to boiling water and cook just a few minutes. It will be tender and sweet!
