Did you notice somewhat of a theme in this week’s Recipe Section? Something like, “Quick and Easy” or “BACON”? With the shorter cooler days and busy fall weekends ahead, I thought some nourishing but simple and fairly quick recipes would be a great help. For instance, the Crispy Kale, Bacon and Basil Farmer’s Market Hash would be a good start to a frosty morning, just before heading out to those soccer or football games. Or it could be an easy supper, finishing up with apple crisp made from apples you may have picked from one of the local orchards. The Cheesy Cauliflower (which also includes bacon in the ingredient list) is another recipe that I felt was easily prepared and a delicious side dish. It would be an excellent accompaniment to chicken, shrimp or supper sausage.
While searching for fresh ideas on using spaghetti squash, Ree Drummond’s recipe for Roasted Spaghetti Squash and Kale popped up. I’ve always enjoyed her style of writing, especially the way she presents her recipes. And even better, another way to use the kale in this week’s share! The optional suggestions at the end of the recipe offer some ways to put your own spin on it.
Please be sure to mark the dates on your calendar for the last Harvest Event of the season, the Pumpkin Pick! Wear sturdy shoes, bring a wagon or cart if you’d like, and remember to take lots of pictures!
