With this final week’s inclusion of a pie pumpkin, I thought it might be nice to have a selection of pumpkin recipes to offer you. They are all relatively easy. Pumpkin Hummus is a great seasonal snack, accompanied by fresh veggies, pita chips or crackers. If watching some of those scary Halloween movies is your thing, it’s fun to have something to munch on. (I get so frightened, I need something to chew on, to calm my nerves.)
The Quick Pumpkin Ravioli is a great side dish, served alongside chicken or pork. And since it’s kind of fun to prepare, think about getting the kids involved. You could set up an assembly line and be finished in no time.
There are many unique recipes for pumpkin soup, but this one intrigued me because of the optional Garlic Kale Sesame Topping. I’ve made it my mission this year to help you use that kale in a variety of different ways. And along the way I have found that I enjoy it more than ever. Hopefully, many of you feel the same!
