Greetings to each one of you! What a beautiful weekend we just had—perfect for our Corn Pick Harvest Event. I hope many of you had a chance to get out to the farm. We went on Sunday morning and came home with a good amount of corn for freezing. We’re offering once again the recipe for “Grandma Pahl’s Frozen Corn”. Many of you are familiar with this one, but we’d like to make sure our new members know about it. You’ll find it’s a fast and easy way to freeze corn. And it’s especially fun to do with a group of helping hands and a bottle of wine. (right, Jane Pahl?)
A second recipe to use some of your fresh picked corn is shared by another member of our Pahl’s family, farmer Cole. The “Sweet Corn Salsa” is delicious with corn chips, or rolled into a burrito or taco. Add an ice cold beer and life is good. (Cole didn’t say that–you heard it from Dee.)
For the last few weeks we’ve featured several recipes for salads, usually as a side dish. I thought it might be time to offer a main dish. The “Stir-Fried Chicken and Bok Choy” is so easy to prepare, especially on a night when you’re short on time. On a day like that, I need an uncomplicated recipe where I know I have all the ingredients on hand. Since my husband likes rice with his stir-fry, I serve this on a bed of brown or white rice, or you could try it over linguine pasta.
This week we’re introducing a new section of our newsletter, titled “Mom’s Corner”. In it we plan on featuring easy, no-fuss, kid-friendly recipes, some of which kids can participate in preparing. Since beets are included in this week’s share, we offered two different beet smoothie recipes. These are great first thing in the morning, or for a mid-afternoon pick-me-up. These recipes were shared on blogs written by moms of small children, so we know they’ve had some critical feedback! Hope you and your little ones enjoy them as well.
