Hi everyone and welcome to Week 7!
You’ll notice a common thread linking our recipes this week—no-fuss, no-mess foil dinners, easily made on the grill or over a campfire. Since ground beef is included in this week’s share, I thought it might be fun to offer several recipes using our veggies and the ground beef together. We’ll then have complete and easy dinners. From personal experience, I would encourage you to use heavy duty foil when assembling these dinners. Also, use a grate over the coals, to make it easier to turn the packets. For those members who receive a mushroom share, be sure to add your mushrooms to any of the dinner packets. The three foil dinner recipes were all found on the website “thedyrt.com” from The Dyrt Magazine, a great site that offers tips, suggestions and advice for camping enthusiasts.
The Easy Grilled Kohlrabi can be made alongside your foil dinners, or save this one for another day, to serve with chicken or fish. On that note, I have another simple and colorful suggestion on how to prepare your kohlrabi. Dice the kohlrabi and carrots in your share into bite-sized pieces. Using a cast iron skillet, saute the vegetables with 1 Tablespoon of olive oil. Season with seasoned salt and freshly ground pepper to taste. Delicious and so easy!
Another fun way to prepare veggies at this time of year is by making shish kabobs. The Grilled Sweet Corn Kabobs make even the simplest meals appear festive.
