Hi everyone! I hope many of you were able to make it out to the Green Bean Pick Harvest Event this past weekend. We were blessed, weather-wise, for a productive and very fun time.
Early in the season one of our members requested some Keto friendly recipes. She was also hoping we would include eggplant in one of our boxes at some point. Kara, we have it for you this week! And we found some recipes that we hope will work for you. The Keto Creamy Chicken and Eggplant Casserole is a quick and easy main dish. For those members who purchased a mushroom share, try adding a few to this dish for additional flavor. For an alternate way to use your eggplant, try the Eggplant Bruschetta. It’s an attractive and tasty appetizer, one that kids may enjoy sampling as well.
A second main dish we’re featuring this week was sent to us by another member, Darleen Harens. The Sheet Pan Lemony Chicken with Potatoes and Kale is hearty and satisfying, perfect for a Sunday dinner. An alternate way to prepare your kale is offered in the Mom’s Corner, under the title “Crunchy Keto Kale Chips.” Even though we’ve included recipes for kale chips in past newsletters, this is another Keto recipe for those who are looking for them. Vicky Abrams and her husband Rami make a point of offering uncomplicated and easy to prepare Keto recipes on their website, “Tasteaholics.com.”
Finally, the Low-Carb and Gluten Free Eggplant “Fries”, also in the Mom’s Corner, is an easy and fun way to introduce your kids to eggplant. It’s a great hands-on activity, and they’ll enjoy dipping their fries in a sauce of their choice.
