Greetings to all our members,
As we approach the end of September, we’ve reached a transition point in our CSA season. Sweet corn makes its final appearance, and our first offering of winter squash is included. Spaghetti squash is an excellent one to start with, due to its versatility. Delicious served as a side dish topped with a little butter, salt and pepper, it can also be made into a complete main dish. With that idea, we have two recipe suggestions for you, one using chicken (“Spaghetti Squash Taco Bowls”), and the other as a vegetarian dish (“Mexican Baked Spaghetti Squash”). To be honest, I did add some ground beef to the second one, to keep the meat-lover in my family happy. I personally enjoyed it either way.
I’ve been waiting for kohlrabi to appear in our boxes again, so I could share CSA member Christene Jolowsky’s recipe for “Cabbage-Kohlrabi Slaw with Salsa Verde”. This one is highly recommended by Chris’ family, and we’re so glad she sent it along to us.
I’m planning to use the bok choy in our shares to make a couple different batches of stir-fry over the next few days. I’ll be bringing it with us this weekend on our last camping trip of the season. We have to make the most of these beautiful warm fall days ahead.
