Greetings to each one of our members,
I’d like to start by saying a huge “thank you” to those members who have sent recipes to me. I will make sure to share them with everyone in future newsletters, when the produce items featured in the recipes show up in our boxes. Again, Thank You!
This week’s share includes another variety of cabbage, Savoy cabbage. The main dish recipe “Chicken Fajitas with Savoy Cabbage Slaw” goes together quickly and easily, especially after work. Note that the cabbage slaw can be made a day ahead to simplify matters and meld the flavors.
In the past, some of our members have asked for Keto-friendly recipes. So from time to time, I will be offering them. This week’s recipe post for “Keto Summer Squash and Zucchini Gratin” fills the bill and is delicious! And you’ll notice another recipe featuring yellow and zucchini squash, titled “Summer Squash Enchiladas”. This one was published several years ago and it was a big hit with our members. I thought it would be fun to bring it back for our new members and those who may have missed it. It has several suggested serving options at the end, to personalize it for your family.
During the weeks ahead, as you look over the recipes you may find that some may not appeal to your family. I have a suggestion for that. For our new members, and as a reminder to our returning members, simply click on the images of the various produce items listed under “What to Expect in Your Share Box”. A new page will come up, describing that particular item in detail and providing storage suggestions and basic preparation techniques. Scroll down all the way to the bottom of this post and you’ll find “Related Recipes” from past newsletters. Click on the title and the recipe will appear. Hopefully you’ll discover an alternate recipe to enjoy!
