Mini sweet peppers are small in size and have an elongated, uniform shape that tapers slightly to the non-stem end. The petite peppers range in color from green, yellow, red, to orange and the skin is smooth, thin, glossy, and firm.
They have a crisp texture, are sweet and contain few seeds. They’re great for fresh eating. Add them to salads, stir-fry, or pasta dishes. They can easily be stuffed with cheese or ground meats. Roasted mini peppers make an excellent addition to soups or stews.
They will keep up to a week in the refrigerator. Freeze roasted or grilled mini peppers for future use.
Mini sweet peppers are rich in vitamin C and contain good levels of vitamin A. They also provide adequate levels of essential minerals such as iron, copper, zinc, potassium, manganese, magnesium, and selenium. In addition, these mini peppers also contain the B-complex group of vitamins such as niacin, pyridoxine (vitamin B-6), riboflavin, and thiamin (vitamin B-1).
