Obtained originally from Nancy Mitchell, Brenda shares another family favorite recipe. Her experience has been that her guests sit around this bowl of decadence and eat non-stop until it’s gone!
1 can black beans
1 cup fresh sweet corn kernels
4 Roma tomatoes, chopped finely
1 onion, chopped finely
1 Tablespoon minced garlic
1/8 cup balsamic vinegar
3 salad peppers, chopped (a combination of green bell pepper and sweet colored peppers, or just sweet peppers)
1 package fajita seasoning
1. Mix together; refrigerate. It’s best if it sits for 8-10 hours.
2. Serve with blue, red and white corn chips.
