Shared by Ashlea Konecny on her website “Heart Hook Home”, this recipe is super simple and so delicious. As Ashlea states, “Look at the POP of those colors and who can say “no” to bacon?!”
Prep time: 5 minutes
Cook time: 10 minutes
Servings: 4 to 6
Ingredients:
1 pound of fresh Green beans (with stem end cut off)
2 cups Red cabbage, shredded
1/2 cup Green onions (sliced)
1/2 cup cooked Bacon (chopped)
2-3 teaspoons minced Garlic (approx 4-5 cloves)
2-3 teaspoons Red Wine or Apple cider vinegar
1 Tablespoon Brown sugar
2 Tablespoons Butter
1/2 teaspoon Sea salt
Directions:
1. In large skillet, cook bacon until crisp. Drain, saving a little to add to butter in Step 2. Cool bacon, chop and set aside.
2. Add butter to skillet and turn burner to medium/medium-high heat.
3. Once butter is melted add beans and garlic, saute for approximately 3 minutes.
4. Add all remaining ingredients (except for bacon) and saute for another minute or until vegetables reach desired tenderness.
5. Remove from skillet and top with chopped bacon.
