Sauteed Potatoes and Mushrooms

For our members who receive a mushroom share, we thought it might help if we occasionally included a recipe using mushrooms. The following one is quick and easy. It is shared by Bee on her website, “Rasa Malaysia: Easy Delicious Recipes.”
Prep time: 5 minutes
Cook time: 10 minutes
Serves: 4
6 Tablespoons Butter
1 pound Potatoes, peeled and cut into small cubes
8 ounces Mushrooms, stems removed and sliced
1 pinch Salt
Chopped fresh Parsley leaves
1.  Melt 4 Tablespoons butter in a saute pan or skillet on medium heat. Add the potatoes and saute until they turn slightly charred and light to golden brown in color. Push the potatoes to one side.
2. Add the remaining 2 Tablespoons of butter and saute the mushrooms. As soon as the mushrooms are cooked, stir to combine both potatoes and mushrooms.
3. Add a pinch of salt and the chopped parsley. Stir to combine well.  Serve immediately.
