Spinach is high in vitamin A, vitamin C and chlorophyll and is the most widely used dark leafy green in this country. It is popularly used for cooking and raw salads. Toss the fresh leaves in a green salad, or try spritzing a little olive oil over the leaves with fresh basil and lemon juice, minced garlic, salt and pepper. Its vitamins are best retained by no or very little cooking. Remember to cook in as little water as possible. Be careful not to overcook. Watch for the bright green color. Remove from heat and cool.
