Crustless Chard and Bacon Quiche

This recipe was found on the about.com Food web-site, and is shared by Diana Rattray.

Prep time: 12 minutes
Cooking time: 30 minutes
Servings: 6-8

Ingredients:
1 cup chopped red onion
3 cups chopped Swiss chard
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4-6 slices bacon, cooked and crumbled
3 cups sharp cheddar cheese
5 large eggs, beaten

Directions:
1. Grease a 9 inch pie plate or spray with non-stick baking spray.  Preheat oven to 350 degrees.
2. Heat a little olive oil in large skillet.  Cook onions just until tender.  Add chopped Swiss chard and continue cooking, stirring, until chard is wilted.
3. Toss with the salt and pepper and crumbled bacon.  Stir in cheese and beaten eggs.
4. Pour into prepared pie plate.  Bake for about 30 minutes, until quiche is firm and lightly browned around edges.
