Hello everyone and welcome back to Week 2 of our CSA program. Didn’t last week seem to fly by, with the holiday in the middle of it? I kept running out of time, and with all the grilling we were doing, I simply grilled some of the zucchini and radishes with the brats from last week’s share. The rest, along with the cucumbers and kohlrabi, I used up in fresh green salads. This week I took more time to try something different. Which brings me to the recipe for Napa Cabbage Spring Rolls, in the “This Week’s Recipes” column. It’s a colorful, savory way to use the Napa cabbage in this week’s share.
Radishes are making a second appearance in our shares this week. Of course, they are delicious sliced into thin rounds and added to a fresh green salad. On a personal note, radishes bring back memories of my dad. On a hot summer day, one of his favorite after-work snacks was a radish sandwich (accompanied by an ice cold beer!). If you’re looking for another way to use your radishes, consider the Summer Radish Salad included in the “This Week’s Recipes” section.
The recipe for Tuscan Grilled Summer Squash and Zucchini is easily adapted to include other vegetables. For instance, you might want to add the potatoes in this week’s share. Since potatoes take a little longer to cook, I usually microwave them briefly just to soften them, and then add them to the marinade.
In the weeks to come, as you are reading over our newsletters, you may come across a recipe that might not appeal to your family. I have a suggestion!
