It seems everyone I talk to lately tells me how fast the summer is speeding by. Is it that way for you as well? With all the running we need to do–errands, taking the kids to swimming lessons or play dates, family reunions–it leaves little time to cook. With that in mind, I wanted to find some easy and tasty recipes that could be put together quickly. The two salads I tried this week can be made early in the morning, placed in the refrigerator, and be ready immediately when you get home. The Tomato, Cucumber and Corn Salad travels well to a potluck or neighborhood barbecue. It has a fresh, crisp taste and texture that most everyone enjoys. And the Ripe Tomato, Squash and Cucumber Salad accompanied by the Roasted Pumpkin Seed Vinaigrette is a great luncheon salad or could be served alongside a nice juicy steak for dinner.
You’ll notice some of our recipes feature mushrooms. For our members who are receiving a mushroom share, we’d like to give you suggestions on how to make the best use of those delicious mushrooms. Chris from Gentleman Forager was kind enough to send some recipes to us, so we’ll be including them from time to time. The Barbecued Maitake Mushrooms recipe is easy to prepare, and you’ll be looking for a second helping!
If you feel like experimenting a little bit this week, the Potato, Squash and Goat Cheese Gratin is for you. It’s creamy, mild and cheesy, comfort food at its best. I found it to be an excellent side dish. I hope your family likes it as much as we did.
