Dee’s Corner

Hi everyone, I hope you all had a good week and that the severe rainstorms over the weekend didn’t inconvenience you too much. We were camping in the St. Croix Bluffs area and there was a power outage for most of the day on Saturday. But this hot humid weather has certainly been good for the crops and our gardens. Everything has been taking off like gangbusters, including the weeds in my garden!
We’re happy to include sweet corn in our shares for the first time this season. Many of you are familiar with Mexican Street Corn–it’s a fun way to prepare sweet corn to offer a little variety to your family. The recipe for “Mexican Street Corn Salad” is so easy to make, and it travels well to a potluck or (small!) family gathering.
We’re offering another salad recipe that is easy to make ahead and will be a refreshing and cool accompaniment to grilled chicken or hamburgers. I like the way all the different shades of green look together in this salad. Kids seem to really like the “crunchiness” as well.

Several of you have asked about what you can do with your leftover share boxes. Here at the farm, we are not able to reuse them, but we are looking into how we can help you. Give us a little time, and we will try to come up with some ideas next week. Thank you for your patience!

Here’s wishing you a fun summer week ahead. Stay cool!
