Harvest Highlights: Week 2 CSA News & Updates

Welcome to Week 2 of the CSA season!

**A quick note for those who ordered mushrooms this week: If you purchased the mushroom add-on for Week 2, your mushrooms will be delivered to your selected pickup location alongside your CSA share. Please note that the mushrooms will not be packed inside your CSA box, so be sure to grab them separately before you leave. If you’re unsure where to find them, just ask the staff or check for a clearly labeled container near the pickup area. We hope you enjoy this flavorful, locally grown addition to your share!**

Friendly Reminders:

  • Share box pickups start at 1pm at all locations on the specified day, members picking up at a Von Hanson’s or Great Harvest Bread locations have until 6pm to pickup, Eden Prairie Holiday and Pahl’s Market offer pickups until 8pm.  Because we are dealing with ultra-fresh produce we ask that you be sure to pickup your share on the specified day. If you miss a share box pickup give us a call at (952) 431-4345 or email nate@pahls.com.
  • If you know you are going to miss a share pickup, please send someone in your place to pick it up for you.  We try to be as flexible as we can so if you have a situation arise and want to know your options, please contact Nate (nate@pahls.com) and we will figure it out!  Unclaimed share boxes will be donated.
  • We ask that members re-use or dispose of the share boxes on their own.  Our food safety certification requires we pack in clean, unused containers.

What’s in the box?!

As the season continues, the variety in your CSA share keeps growing! This week’s box is packed with a wonderful mix of fresh greens, colorful vegetables, and sweet summer fruit. You’ll find rhubarb, bok choy, radishes, kale, zucchini, strawberries, and tomatoes.  A collection that’s perfect for everything from fresh salads to grilling, baking, and quick weeknight meals.

A few simple tips can help you enjoy your produce at its best. Remove the leafy tops from your radishes before refrigerating them to help the roots stay crisp. Kale stores best in a loosely sealed bag in the refrigerator and is delicious massaged into salads, blended into smoothies, or sautéed with garlic. Bok choy is at its best when cooked quickly in a stir-fry, added to soups, or grilled alongside your favorite protein.

Tomatoes should be stored at room temperature whenever possible to preserve their flavor and texture. Zucchini is incredibly versatile, slice it onto the grill, roast it with olive oil and herbs, or shred it into breads, muffins, or pancakes for a fun twist. Strawberries are best enjoyed within a few days and should be refrigerated unwashed, then rinsed just before eating. If you’re not ready to use your rhubarb this week, simply chop it into pieces and freeze it for future crisps, pies, or homemade jam.
