🌽 From the Field: Why Sweet Corn Tastes Best the Day It’s Picked 🌽
The arrival of sweet corn is one of the true milestones of a Minnesota summer. But did you know that sweet corn actually begins changing the moment it’s harvested?
As soon as an ear is picked from the stalk, the natural sugars inside the kernels begin converting into starch. Over time, this process gradually reduces the corn’s sweetness, which is why truly fresh-picked sweet corn has a flavor that’s hard to match.
To preserve that just-picked sweetness, our harvest crew starts at sunrise while the temperatures are still cool. Harvesting in the early morning helps keep the corn crisp and fresh. Once the corn arrives back at the farm, it is immediately placed into our refrigerated coolers at 35 degrees to remove the field heat. Rapid cooling helps preserve its sweetness, tenderness, and overall quality before it’s packed into your CSA share.
When you get home, we recommend placing your sweet corn in the refrigerator right away. Keeping it cold slows the conversion of sugar to starch and helps maintain the sweet, tender flavor that makes fresh Minnesota sweet corn such a summertime favorite. For the very best eating experience, try to enjoy it within a day or two of bringing it home.

🌽 Sweet Corn: It’s finally here! The first picking of Pahl’s famous sweet corn has arrived, and we couldn’t be more excited to share it with you. Sweet corn begins converting its natural sugars to starch as soon as it’s picked, so for the sweetest flavor, refrigerate it as soon as you get home and enjoy it within a day or two. Whether you boil it, grill it in the husk, or roast it in the oven, all it really needs is a little butter and a pinch of salt.
🥬 Savoy Cabbage: With its beautifully crinkled leaves and mild, slightly sweet flavor, Savoy cabbage is more tender than traditional green cabbage. It’s excellent in fresh slaws, stir-fries, soups, or simply sautéed with butter and garlic. Store it in the refrigerator and wash the leaves just before using.
