I want to take a moment and remember those we lost on 9-11, 17 years ago already. We cannot forget the sacrifices of all the brave men and women who that day and to this day continue to keep us safe and free.

As we prepare for this week’s CSA shares, I look back over the season and see just how far we have come and how wonderful this year has been so far.  Sweet corn season is winding down quickly, along with cucumbers and peppers.  We have also begun the fall squash harvest, and how I have missed having squash for dinner!

Some members will see Spaghetti squash in the box this week, and it happens to be my favorite.  I am sure Dee has a wonderful recipe but I’d also like to share my favorite way to enjoy it.  I simply like to use spaghetti squash as a substitute for noodles in the kitchen.  Paired with breaded chicken, spaghetti sauce and some cheese, it doesn’t gets much better!

We will be beginning our fall tillage as well this week, keeping up on the countless acres we have to prepare for their winter slumber. Disking, chopping, and ripping are going to keep us busy for the next month and a half at least.  And so we continue forward, through the change of the seasons, and we will make it the best it can be!
