Ingredients for the Fritters:
1 Kohlrabi, peeled and grated
1 Carrot, grated
1/4 teaspoon Coriander
1/4 teaspoon Turmeric
1/8 teaspoon Cumin
1/4 cup chopped Green Onions
1/4 cup chopped Cilantro
1 Egg
1/2 cup Flour
1 Tablespoon Milk
2 or more Tablespoons Vegetable Oil, to fry the fritters
(Note: Several similar recipes also included grated zucchini in the fritter batter recipe, for added interest/color/nutrition. A good way to use the zucchini in your share!)
Ingredients for Yogurt Sauce:
1 cup Yogurt
1 tablespoon chopped Green Onions
1 tablespoon chopped Cilantro
Salt and Pepper
Directions:
To Prepare the Fritters:
1. Squeeze as much of the moisture out of the grated vegetables as you can, using either cheesecloth or a colander.
2. Mix all of the ingredients except the oil.
3. Heat the oil in a frying pan. Place a 1/4 cup spoonful of the batter in the pan and press down.
4. Cook for 3-4 minutes. Flip and cook for 2 more minute.
5. Serve with yogurt sauce.
Yogurt Sauce Directions:
Mix all of the ingredients together in a small bowl.
