Healthy Cowboy Caviar
Ingredients:
Black beans (one can)
Great Northern White beans (one can)
2-3 ears of Sweet corn (cut right off the cob without cooking)
1-2 Red peppers, diced
Red onion (half diced if you like)
Avocado (1-2 diced)
Directions:
Mix in a large bowl and squeeze lime juice with salt, pepper, garlic salt and a little olive oil if you like! Store in the fridge and enjoy!
*Mom tip: have them use tortilla chips to eat with it! Or mix with tortilla strips.

Maple roasted beets and carrots:
Ingredients:
5 large Carrots, peeled & sliced
4 medium Beets, peeled & diced
Make sure they are diced about the same size so they cook evenly.
Directions:
1. Preheat oven to 425 degrees F.,  line a baking sheet with tin foil, and spray with Pam.
2. Put the veggies on the sheet pan and cover with olive oil and salt and pepper and toss with your clean fingers.
3. Bake for 15 minutes.
4. Take it out and add a little butter (2-3 Tablespoons) and 2-3 Tablespoons of maple syrup.
5. Bake for 5 more minutes.
