Harvest Highlights: Week 13 CSA News & Updates
Hello, wonderful members of our CSA program! Can you believe it? We’re already in Week 13, and the countdown to the end of this season is underway.
First a bit of unfortunate news. We regret to inform you that due to unforeseen challenges in the field, including the impact of an ongoing drought, we will not be able to offer canning tomato shares during this CSA season. We understand that many of you were looking forward to this offering, and we share your disappointment in having to make this difficult decision.
Last week brought a delightful twist to our share boxes with the introduction of winter squash and Minnesota-grown apples. We hope you enjoyed those early tastes of autumn as much as we did! This week, we’re back with more delightful surprises, featuring two new varieties of winter squash: the ever-popular Butternut and the versatile Spaghetti squash.
Before we dive into the mouthwatering details of this week’s share, let’s address a common misconception: the idea that winter squash simply a mushy, one-dimensional vegetable. Nothing could be further from the truth! Winter squash is a versatile and nutrient-packed gem, and there are countless creative ways to incorporate it into your meals.
Butternut squash is the sweetheart of the squash world, and for good reason. Its sweet, nutty flavor and creamy texture make it a favorite for soups, stews, and roasted dishes. Try it in a rich and hearty butternut squash soup, stuffed with grains and herbs, or simply roasted with a drizzle of olive oil and a sprinkle of sea salt. It’s a versatile ingredient that can elevate both savory and sweet recipes.
Spaghetti squash, on the other hand, is a true chameleon in the kitchen. When cooked, its flesh transforms into long, stringy strands that resemble spaghetti noodles. This makes it a fantastic low-carb, gluten-free alternative to pasta. Toss it with your favorite sauces, sautéed veggies, or even a classic pesto for a light and satisfying meal. You can also stuff it with your choice of fillings for a unique and tasty twist.
With just three more weeks left in our CSA program, let’s savor every moment and every bite of fresh, local goodness. The flavors of fall are here to embrace, and we’re delighted to be sharing them with you. Happy Eating!
