Welcome to September!

Here's another good one from the Dee's Corner archives... Hello everyone and welcome to September! By the time you receive this newsletter, you will have made it through that first day back to school. I trust it went well for all, from our bus drivers, to our littlest ones, on up to our high school teachers. It’ll only get easier and go more smoothly as time goes on. Beets are making an appearance in this weeks share...  I’m trying my best to be enthusiastic, but in the interest of full disclosure, this is one vegetable I have a hard time enjoying. When you click on the image of beets under the post “What to Expect in Your Share Box”, you’ll notice a variety of recipes using beets, that we’ve posted in past newsletters. You can see that I’ve tried several ways of preparing them. The smoothies weren’t too bad. And I really like grilling vegetables. One of the recipes in the archives, the Roasted Beet Salad, uses this method. When the roasted beets were combined with a nice variety of salad greens and the dressing shown in the recipe, I didn’t mind them a bit! Of course, the pecans, blue cheese and dried cranberries also helped. Another recipe from the archives, Roasted Green Beans with Beets, Feta and Walnuts is somewhat similar in content to the one I just mentioned, but the technique is different. The previous one is excellent as a main dish for lunch or a light supper, while the second one makes a great side dish to accompany chicken, steak or pork chops. In this one, the vegetables are roasted in the oven. The Cucumbers in Sauce recipe is one of those family recipes that I’m happy to share with our members. Mary Winum, Jane Pahl’s mother, gave this one to me. It reminds me of one my mother and grandmother used to make, but it was never written down.  Have a great week, everyone!
